Happy National Bean Day!
Today we’re celebrating one of the most versatile and nutritious foods on the planet – beans! These little legumes pack a big punch when it comes to flavor and nutrients, and there are so many different types to choose from. From black beans to garbanzo beans (also known as chickpeas), the possibilities are endless, and so are the ways to enjoy them. But one of our absolute favorites is in the form of a healthy bean dip, and we’ve got a recipe for a great one.
Not only is this dip delicious, it's also loaded with protein and fiber, making it the perfect snack if you’re looking for a boost of energy. Oh, and did we mention it’s insanely easy? To make this bean dip, just gather the ingredients below, then mash the black beans and kidney beans together in a large bowl using a fork or potato masher. Add in the rest of the ingredients, mix until everything is well-combined, and voila! Serve with your choice of veggies, crackers, or chips.
1 can of black beans, drained and rinsed
1 can of kidney beans, drained and rinsed
1 can of corn, drained
1 small red onion, diced
1 jalapeno pepper, seeded and diced
1 clove of garlic, minced
1 teaspoon cumin
1 teaspoon chili powder
1/2 teaspoon salt
1/4 cup fresh cilantro, chopped
1/4 cup plain Greek yogurt
1/4 cup sour cream
