Pancakes are a heavenly breakfast staple, and are an especially delicious treat when it comes to everyone’s favorite — weekend brunch! We could’ve shared an indulgent, heavy, and unhealthy recipe for flapjacks with you, but we’re thinking you’ll love these healthier — yet tasty — pancakes! We’re still riding out the new year, new me mantra, and extending it through our month-long self-love theme. Trust us, this recipe will be in demand with anyone you make them for (including yourself)! Enjoy!
INGREDIENTS:
1 1/2 cups all-purpose flour
1 tbsp baking powder
1 tsp salt
3 tbsp chia seeds
3 tbsp of maple syrup
1 1/2 cups of oat milk
2 tsp of vanilla extract
1 tsp of cinnamon
1 tsp of apple cider vinegar
DIRECTIONS:
- Whisk all dry ingredients in a large bowl.
- Next, gently mix in the wet ingredients. Let sit for about 5-8 mins.
- Heat a non-stick pan to medium-high heat. Scoop 1/3 of the mixture on to the pan. Use a spoon to help spread the mixture on to the pan to your desired pancake thickness.
- Once the batter begins to bubble, flip the pancake. Cook for 3-4 mins on each side. If you like thicker pancakes cook for 4-5 mins on each side.
